Scorzonera Duplex
Scorzonera Duplex is a classic, nutritious vegetable with a mild, nutty flavor. Ideal for stews, soups, or pan-frying in butter. This variety is slow to bolt, allowing for a long and steady harvest from October to March.
Sowing
Sow Scorzonera seeds directly into well-drained, sandy soil from March to mid-May. Remove stones and clumps to prevent crooked roots. Sow in rows 25 cm apart. Thin seedlings after emergence so that plants are spaced 10 cm apart. Keep the soil moist during germination, which takes 1.5 to 3 weeks. Scorzonera grows slowly but steadily and benefits from an extra dose of potash in July to support strong root development.
Harvesting
Harvest from October to March, preferably after the first frost for a sweeter taste. Use a spade or fork to carefully loosen the fragile roots — sometimes hand-digging is necessary.
Tip: Wear gloves during harvest, as the white sap is sticky and discolors quickly.
