With garden peas there is a distinction between two seed types. A type with round, smooth seeds when ripe and a type with crinkled seeds. Crinkle-seeded peas have a higher sugar content and a lower starch content than round peas. Crinkly seeded peas are tastier and much sweeter due to this starch / sugar composition.
